After seeing my family on a Sunday morning, cleaning the house and getting my things ready for work on Monday, the rest of the day is for baking (while trying to keep the kittens out of the kitchen, of course). Before I start, I always have a quick check to see if I have any fruit left over from the week. I hate waste, so making something that will get eaten out of something that is probably almost ready to be thrown away puts a stop to that and it helps to save the pennies, too!Ingredients
- 1/2 cup self raising flower
- 1/2 cup caster sugar
- 50g softened butter
- 2 large eggs
- 1 large bar of milk chocolate
- 1 ripe banana
- Clear honey
- Cupcake cases
Method
1: Preheat your oven to 190c (this will vary depending on your oven, mine was set to 200c!)
2: To make the cake mix; whisk the butter, flour, sugar and eggs together, in a fairly large bowl, for 2 minutes (or until the mixture is smooth) By hand or with an electric whisk are both fine
3: Pop the mix to one side and roughly chop up your chocolate bar. I find it helps if you give the bar a really good bash with a rolling pin first! (don't forget to leave the chocolate in the wrapper before you do this!) I would have used chocolate chips, but this method is a stress reliever ;) Once the chocolate is in small pieces, stir all of this into your cake mixture
4: Evenly distribute the cake mixture into the cases, filling just above halfway. Pop into the centre of the oven and cook for about 20 minutes (I rarely use timing guidelines, I do the fork test... pop a fork through the centre of the cake, if there's no cake gloop left on the fork when you remove it then they're ready to go! My cakes were in my oven for 30 minutes before they were ready)
5: Remove the cakes from the oven and immediately drizzle a touch of the clear honey over each cake, then leave to cool.
